Mouthwatering Crockpot Meals for Busy Days

Sometimes weekends are as hectic as weekdays. It doesn’t matter if work or play is keeping you out of your kitchen before dinner—you don’t have forgo a home cooked meal. Plan ahead and make one of these mouthwatering slow cooker meals instead of hitting the drive-thru (again!) on your way home. Your body will thank you!

Gumbo

You’ll feel like you’ve traveled to the bayou when you come home to the aroma of this well-seasoned gumbo complete with chicken, sausage, shrimp and plenty of spices. It cooks on low heat for 6-7 hours. When you are really short on time, make the rice at the same time you add the shrimp and don’t worry about throwing it to the crock pot. Simply spoon some of the gumbo over a warm bowl of rice instead.

Baked Ziti

Don’t let the name fool you—no baking is required to make this Italian-American crockpot cuisine. Layer ingredients in your slow cooker and you’ll have a hearty dinner that serves eight at the end of the day. Serve it with a pre-packaged Caesar salad and some bread to round out the meal.

Chicken Fajita Soup

This crockpot meal only requires a few minutes of advance prep time and a few more minutes to shred the chicken. Aside from that it’s hands off! Top it however you like—with tortilla strips, sour cream, guacamole, cilantro, lime or grape tomatoes.

BBQ Beef Sandwiches

Swap out the chuck roast in this delicious recipe with a round roast to reduce calories and increase tenderness. After simmering all day in your crockpot, the meat will practically melt in your mouth. If you aren’t feeding others, you can freeze leftovers to quickly reheat on another busy day.
