Make-Ahead Breakfasts for the Week

Homemade breakfast? Who has the time? You do! Just because you have a busy lifestyle doesn’t mean you have to settle for sugary cereal or greasy drive-thru dishes for the most important meal of the day. Here are a few healthy breakfast ideas that you can make in advance to start any day with a smile.

Monday: Breakfast Jars With Kefir, Oats, Nuts and Maple Syrup

Packed with protein and loaded with vitamins, you can make this refreshing breakfast Sunday night and grab it out of the fridge in the AM to make your Monday a little less manic.

Tuesday: Ham and Cheddar Muffins

Flavorful ham is the star of these savory muffins. Bake a large batch and freeze muffins in Ziploc freezer bags for up to three months. Pull a few out of the freezer the night before to let them thaw at room temperature, or microwave on high for about 30 seconds for a great breakfast on the go.

Wednesday: Gingerbread Waffles With Berry Jam

Skip the store-bought waffles with little nutritional value and whip up a batch of your own gingerbread waffles. Let the waffles cool completely, then freeze them in an airtight container, separating each waffle with wax paper. Pop a couple in the toaster for a healthy, mid-week breakfast and top with fresh fruit or berry jam.

Thursday: Breakfast Burritos

When your busy lifestyle demands multi-tasking even before you hit the office, try these zesty, make-ahead burritos. They can be eaten with one hand, leaving your other free to check your email.

Friday: Apple Cinnamon Steel Cut Oatmeal

Put all the ingredients in a slow cooker Thursday night and you’ll have sweet dreams for sure, waking up to a delicious, hot breakfast Friday morning. Leftovers can be frozen and reheated for a flavorful, filling meal on another morning.
