Lazy Summer Weeknight Dinners

On a scorching summer day, the last thing you want to do is spend an hour cooking over a hot stove. Celebrate the season by hitting a farmer’s market on the weekend to load up on produce, then use it to make each of these easy summer recipes in 30 minutes or less.

Monday | Corn Cakes with Summer Salsa

Shuck a few extra ears of corn on the weekend to save prep time on this quick and easy vegetarian dish. Serve it as an entrée with a white bean salad, or as a side next to some grilled salmon.

Tuesday | Chilled Tomato Soup

This refreshing summer dinner can be made up to two days in advance, so all you have to do after a long day at work is pull it out of the fridge. Try it with a grown-up grilled cheese sandwich—think gooey gouda between two slices of perfectly browned sourdough bread.

Wednesday | Summer Squash Pizza

Keep your kitchen cool by grilling the vegetable toppings and crust for this pizza on your outdoor grill. Top with fresh herbs, serve with a green salad and voila! You’ve got yourself a meal.

Thursday | Stovetop Shrimp Boil and Cheddar Bay Biscuits

Corn, potatoes and shrimp make this one of the most substantial summer meals on the menu. This entrée pairs perfectly with biscuits, and a chilled Vinho Verde to bring out the flavor of the shrimp.

Friday |  Lemon Primavera Bowties

Use some of the leftover yellow squash from Wednesday’s dinner, and add a few different veggies—bell pepper, peas, onions and tomatoes—for a colorful culinary concoction. This dish is hearty enough to stand alone, or serve it with some bread or a green salad if you prefer.
